Steamed peaches with amasake-cashew cream

Had a lot of peaches from the market and this is what we did with some of them.


ingredients

  • 4 peaches & 8 walnut halves
  • Cashew nuts
  • Pinch of Salt
  • Rice milk
  • Water
  • Rice syrup
  • Amasake

instructions

  1. Steam peaches then cut in half, remove the stones. Roast nuts and place in centre of the peaches Place in 8 small bowls
  2. Soak cashew nuts overnight, then boil for 40 mins with a pinch of salt, and a spoonfull of rice syrup
  3. Occasionaly add rice milk or water if needed, then blend with the amasake.
  4. Serve peaches or cream hot or cold
