5 Minute Muffins

This is a great quick fix occassional treat recipe. Enjoy!


ingredients

  • 2 tablespoons of roasted sunflower seeds
  • 5 dried apricots - thinly sliced
  • 2 generous tablespoons of peanut butter
  • 2 generous tablespoons of malt syrup (to start with)
  • 5 brown rice crackers - finely crumbled
  • A pinch of salt

instructions

  1. Combine peanut butter, malt syurp & a pinch of salt in a pan and heat on a medium flame. Once the mixture is hot, add the sunflower seeds and apricots and mix well. Then crumble in the rice crackers and mix it all together.
  2. The mixture should be a little wet and sticky. If it's too dry add a little bit more malt syrup to help bind the ingredients. If it's too wet, add some more rice crackers. Turn off heat and allow to cool.
  3. Once the mixture has cooled, spoon into muffin moulds (make sure you press the mixture firmly into the mould) and put in the fridge for 30 minutes.
