Lotus root & wakame soup

A great way using fresh lotus
ingredients
- Fresh lotus root (peeled & sliced into 1/2 moons)
- 1 onion (thinly sliced)
- 1 wakame stalk (soaked and then cut into small pieces)
- salt
- water
- miso
- oil for frying
instructions
- Saute the onions in oil for 5 minutes before adding the lotus root. Saute for a further 5 minutes and then add a pinch of salt. Cover and cook on a low flame for 20-25 minutes. Then add water, the wakame & cook for a further 10 minutes. Add miso to taste.
- You can also make this soup without oil by putting all the ingredient with water into a saucepan and simmering for 20 minutes. Serve with a garnish of your choice & enjoy!
