Squash & arame soup

A mineral rich soup which is nourishing for the stomach & spleen.


ingredients

  • 1 cup of squash (cubed), 1 onion (cubed), 1 small handful of arame (rinsed & soaked), 1/2 leek (finely slicked), dark miso

instructions

  1. Place arame in pot with 3 cups of water and bring to a boil. Add squash and onion and simmer for 10 minutes. Next add chopped leek and allow to soften. Then add miso to taste. To add miso, scoop out some warm liquid and mix with a spoonful of miso until you have a smooth paste. Add this to the soup and taste. Add more miso if necessary. Garnish with chopped spring onion and/or parsley.
