Squash soup

An easy to make sweet & velvety soup
ingredients
- 1/2 a squash (cubed), 1 small piece of kombu, water (approximately 4 cups), salt, shoyu or white miso to taste
instructions
- Place squash, kombu & water into a pot. Bring to boil and simmer for 30 minutes. Once soft, blend until smooth. Add more water if necessary (depending on how thick you want the soup to be). Then add white miso or shoyu to taste. Garnish with watercress, parsley or spring onions to serve. Roasted almonds are a delicious garnish for this soup too.
