Buckwheat & millet squares with a tahini dressing

A rich & satisfying grain dish


ingredients

  • 1 cup of buckwheat, 1 cup of millet, 4 cups of water, 1 onion (diced), parsley (finely chopped)
  • For the dressing: 2 tablespoons of tahini, 1 tablespoon of brown rice vinegar, 1 tablespoon of shoyu, 2-4 tablespoons of water

instructions

  1. Place rinsed buckwheat and millet into a pot. Add water and a pinch of salt. Bring to a boil. Lower flame and simmer for 20 minutes. Mix in onions and spoon mixture into a baking mould. Allow to cool. Once cooled, cut into squares & serve with dressing.
  2. To make the dressing, mix all the ingredients together. Give it a taste and add more vinegar or shoyu to taste. Add more water if necessary.
