Brown rice paella

Delicious & nutritious
ingredients
- 2 cups of brown rice, 1/2 cup of red pepper (diced), 1 cup of carrots (diced), 1 onion (diced), garlic (crushed), 1 cup of peas
- bouillon, shoyu, mussels (cooked), freshly squeezed lemon juice
instructions
- Place brown rice with 4 cups of water and a pinch of salt in a pot. Bring to boil. Simmer for 40 minutes. Meanwhile, blanch the carrots & peas until tender. Then sauté onions and garlic in a little sesame oil for 5-10 minutes before adding the mussels. Add a little shoyu.
- Once the rice is cooked, mix in all other ingredients. Mix 1/2 a cup of water with some bouillon (approximately 1 tablespoon). Add to rice and cook for further 5-10 minutes until all liquid has gone. Add some freshly squeezed lemon juice and serve.
