Nettle soup

Nettles, abundant in the spring time, have incredible healing and cleansing properties. Pick the young, fresh leaves on the top and make sure you don't get stung by ensuring you either wear rubber gloves or develop your nettle plucking skills! It is important to avoid brushing the needles of the nettle. You can usually do this by being quick and confident and pulling in an upward direction (to go with the flow of the needles).
ingredients
- Nettle leaves, water, shoyu
instructions
- Pick the nettles. Rinse the nettles well and then soak in hot water for about 20 minutes. Don't throw away the soaking water as you can use this for the soup. Chop the nettles as you wish and then simmer gently in water for approximately 5 minutes. Season with shoyu & enjoy.
