Fried black eyed beans

A protein rich stir fry - great for the summer months


ingredients

  • 1 cup of black eyed beans (cooked), 1/2 red pepper (cut into matchsticks), 1/2 yellow pepper (matchsticks)
  • carrots (matchsticks), parsley, herbsalt, sesame oil

instructions

  1. Heat sesame oil in wok. Stir fry carrots first, then add the peppers. Add the beans next and then add herb salt to taste. Mix in chopped parsley before serving.
