Fried black eyed beans

A protein rich stir fry - great for the summer months
ingredients
- 1 cup of black eyed beans (cooked), 1/2 red pepper (cut into matchsticks), 1/2 yellow pepper (matchsticks)
- carrots (matchsticks), parsley, herbsalt, sesame oil
instructions
- Heat sesame oil in wok. Stir fry carrots first, then add the peppers. Add the beans next and then add herb salt to taste. Mix in chopped parsley before serving.
