Strawberry Jelly or Kanten

ingredients

  • Strawberries, organic if possible 1 medium punnet
  • Agar Agar flakes 4 tablespoons full for medium set jelly
  • Organic strawberry or redcurrent juice 1 packet or bottle
  • Brown Rice Syrup for extra sweetness according to taste
  • Vanilla is optional

instructions

  1. Wash the strawberries with their stem on to keep the flavour, then de stem and cut into halves.
  2. Pour the juice into a large saucepan with AgarAgar flakes. Simmer until they have melted. Stir a little with wooden spoon. Put a dessert spoon of jelly in a saucer & see that it sets to the consistency you want. Sweeten with rice syrup if desired.
  3. Place strawberries into serving dish and pour the hot juice over them. Leave to set.
  4. Decorate with fresh mint. Chill if you wish before serving.
