Brussel Sprouts with chestnuts

category: vegetables | season: winter | uploaded: 2 December 2011

Brussel sprouts are packed full of essential vitamins and minerals and are a must at this time of year.

ingredients

  • About 20 brussel sprouts (cut into quarters and par boiled)
  • 1 red chilli (diced, with seeds removed)
  • 2 medium onions (thinly sliced)
  • 1 cup of pre cooked chestnuts (cut into quarters)
  • sesame oil (for frying)
  • 1 clove of garlic (optional)
  • 1/2 teaspoon of cinnamon
  • herb salt

instructions

  1. Add enough sesame oil to lightly cover wok or sauce pan & allow oil to heat for a minute or so.
  2. Add the thinly sliced onions and stir fry for a couple of minutes until they soften.
  3. Next add in the chilli & garlic and stir fry for a couple more minutes.
  4. Then add in the brussel sprouts and chestnuts. Add enough herb salt to taste (being careful to add this a bit at a time so you don't over do the salt). Sprinkle in the cinnamon and cook for a further 5 minutes before serving.
