Mince Pies

These are great Christmas Mince pie(s) you can make one giant pie, regular ones or mini ones. Eat them on there own or serve with a delicious custard or cashew cream.
ingredients
- For the pastry:
- 1 cup of wholemeal flour
- 1/4 cup of olive oil
- 1/2 cup of rice syrup
- 2 teaspoons of vanilla
- 1 teaspoon of cinnamon
- pinch of salt
- For the filling:
- 1 cup of raisins
- 1/2 cup of fresh cranberries
- 1 orange peeled & roughly chopped
- 1 apple diced
- 1 pear diced
- 1 tablespoon of cinnamon
- 1 teaspoon of nutmeg
- 1 tablespoon of lemon rind
- 2 cups of grape juice
instructions
- To make the pastry, set the oven to about 180 degrees. Place flour into bowl and the cinnamon and salt. Mix well before adding the vanilla essence, olive oil and rice syrup. Mix into a dough. If the mixture is too wet, add enough flour to form a dough consistency. It should be moist and soft.
- Instead of rolling this pastry out, I use my hands to pat it into my chosen tin or moulds. You can make one giant pie, regular ones or mini ones. Choose your mould and brush with a little oil before lining the tin with a thin layer of the pastry. Once you have lined the tin with the pastry, bake in the oven for approximately 12 minutes until the pastry changes to a nice golden colour. Take out and allow to cool.
- For the filling: Mix all the filling ingredients, apart from the cinnamon and nutmeg, together in a pot and bring to a boil. Cover and simmer for 20 minutes. Take the lid off and add the cinnamon and nutmeg and cook until soft and most of the liquid has disappeared.
- Fill the pie case(s) and enjoy! You can eat them on there own or serve with a delicious custard or cashew cream.
