Stir fried kale with roasted almonds

Greens are an essential part of a healthy diet. Great for strengthening the blood and respiratory system. Nutritionally, they are packed full of vitamins and minerals including calcium, magnesium, iron, potassium, phosphorous, zinc and vitamins A, C, E and K. They also contain fiber, folic acid, chlorophyll and many other micronutrients and phytochemicals. So make sure you eat your greens!!
ingredients
- a couple of handfuls of curly kale
- sesame oil for frying
- carrot (optional) grated
- shoyu (half a tablespoon)
- almonds (optional) roasted
instructions
- To prepare the kale, rinse it and use your hands to tear off the kale from the stalk. Shred into smaller pieces. The stalks can be chopped finely and fried first but if you don't want to use them in this dish, you can save them for later use in soups, stews or fresh juices.
- Once the kale and carrot are ready, heat the oil in a wok for a minute or two. Then add the shredded kale. Keep on high high and stir for a couple of minutes. Then add the shoyu and stir well.
- Stir fry for a further minute. Serve with roasted almonds.
