White Creamy Cauliflower & Turnip Soup

ingredients

  • 1 small Cauliflower
  • 6 small Turnips
  • 5 medium Onions
  • 2 inch piece of Kombu
  • White Miso
  • Sesame Oil
  • Sea Salt
  • Parsley

instructions

  1. Wash and cut all the vegetables into 1/2 inch size. Heat the oil and lightly sauté the onions in the bottom of big saucepan.
  2. Add the kombu and several cups of boiling water. Add the turnips and cauliflower and tiny pinch of sea salt to draw out flavour.
  3. Cook with lid on until very tender. You may add a little more water depending on the consistency you want. Take off the heat and place on a mat and blend until smooth with a hand blender.
  4. Season delicately with a little more salt and a dash of White Miso to taste. Return to the stove for 3 minutes to cook in the seasoning, pour into bowls, garnish with parsley, as a sprig or coarsely chopped
  5. Subtle and delicious
